life in rose
Rosé time! When the heat finally arrives, clear, sparkling, white and rosé wines take on more prominence.
Although new gastronomic trends, such as Peruvian cuisine, techno-emotional and fusion, among others, invite you to drink different wines every time, the time of year plays an important role and the heat tempts you to choose rosé wines.
They are obtained from black grapes (red) that through a short infusion of the skins in the must, the desired color and aromatic intensity is obtained.
They are usually presented dry, something that allows them to harmonize with fish-based dishes, practically of all types and cooking, rice dishes, white meats, pâtés, cold cuts, and more.
Following the theory of color pairing, salmon, red tuna, tomato among many others, will get along wonderfully.
It looks great as an aperitif and reception wine, as it is also very pleasant to drink alone.
Another place well earned is when a menu of steps is presented, before a varied proposal in preparations, textures and flavors, different and consistent wines are needed; thus the white or pink ones are more convenient due to their lightness and freshness.
Today many wineries offer sparkling rosé wines, and the trend continues to offer wines with a very pale tone in the style of rosés from Provence, in France.
Some rosés have residual sugar and respecting the premise “dessert should not be sweeter than wine”, good combinations can be found, especially in preparations that include fresh fruit.
